The Road to Chefdom: Roast Chicken

I blogged a few days ago about going back to the basics--I've culminated a list of dishes to master by December. This week, I'm tackling roast chicken.

My standard roast chicken recipe is via The Pioneer Woman. It's awesome, but as much as I love TPWs food, it's rarely healthy. It might work for her and her super active, tackling the frontier family, but for Bethany Librarian...not so much. This recipe, for example, uses a whole stick of butter. It helps give the skin a nice crisp, but a stick of butter...c'mon. Even with BodyPump and Body Sculpt, I can't do that to myself.

In trying to figure out how to make things healthier, I thought back to my recipe for Greek Grilled chicken. I'm thinking I can replace the butter with Greek yogurt! I won't use Greek herbs and spices, but will add sage, thyme, garlic, dry mustard, and shallots to the mix. Possibly diced chilies. Just to make things fancy :)

But, I'm also remembering how I marinated the Greek Grilled chicken. That seemed to be a key element of success, so I'll try that too.

I'm a little concerned about the crispiness factor, I like roast chicken with a bit of a crunch. It might require playing around with the temp. We'll see!
