Spring Eats: Week 2 and Other Stuff

Cheat week!!!

I'm off to Boston tonight for HxRefactored so I didn't do any grocery shopping this weekend. I learned a few things from last week's meals--mainly that though delicious on the first night, re-heated one pot pasta is soggy and gross. Definitely a meal meant to be eaten on the same night it's cooked. The quinoa and cuban chicken was amazing--and the fried bananas. omg. Frying bananas in coconut oil with a touch of sea salt and chili pepper is a genius idea. #amazing Also, roasted grape tomatoes + basil + fresh mozzarella is going to be a Spring/Summer staple for me, much like my Pho craze this winter. #alltheyummies

Back to Boston and HxR. I know the whole conference will be great, but it was an absolute go for me when I saw it offered a session on Health Literacy and Equity. Perfect and exactly where I want to go with my career. Here's a blurb:

#gah I'm so excited to see what people are doing, and possibly, collaborating on a project. Maybe? Hope so.

My dream job is a Health Communications Specialist position at the Department of Health and Human Services, especially if it involves creating products for members of minority communities. Last year, I applied for an opening and made it past the first set of interviews to the top three to be cut there. #heartbreak That was before all my digital health communication training though, and I'm going to try again--soon. I want it badly, if only to prove that I can best the USAJobs process. Plus, I know I'd be great.

It's earlier than my ideal time to visit the Bean Town--I love it in May, but early April is a little too early. But, I get to see a few friends, we will drink good wine and eat good food and I will be happy :)
