Peanut Butter Banana Oatmeal

I don't like oatmeal. I want to, I know it's really healthy. One of the most nutritious breakfast foods ever and hearty on a cold winter morning.

I've tried it a million ways, from the standard flavored Quaker packets to Crock Pot Cherry Vanilla (was soo hopeful about that one) to steel-cut oats with fresh fruit mix-ins. Nope...my taste buds aren't having it. The closest I can get is this awesome Oatmeal Peanut Butter Banana Smoothie. Can't even taste the oatmeal.

With my love of that recipe in mind, I'm giving oatmeal another chance. Accepting advice from Facebook friends and combining a few recipes I found surfing the web, I've come up with this recipe for Peanut Butter Banana Oatmeal. Hopefully, I'll like it!

Peanut Butter Banana Oatmeal

1/2 cup rolled Oats
3/4 cup Milk
1/4 cup Water
a sprinkle of Salt
1 Banana, sliced*
1 tsp Vanilla
3 tbsp Peanut Butter*
1 tbsp ground Cinnamon*
1/4 cup ground Flax Seed*
Brown Sugar*
mini Chocolate Chips (optional)
Peanut Butter Chips (optional)

In a large saucepan, bring milk, water, and salt to a boil. Stir in oats; cook for 1-2 minutes or until thickened, stirring occasionally. Remove from the heat. Stir in the banana, peanut butter, vanilla and flax seed. Add brown sugar to taste. Sprinkle with chocolate and peanut butter chips.

* Quantity can be adjusted according to your taste.
