I took advantage of a sale Whole Foods was having on shrimp this past Friday and bought enough to feed me for the next month. I love shrimp. I'll blame it on being a Carolina Girl (best in the world!).
My recipe to try this week is Shrimp and Coconut Curry with Green Beans from BonAppetit.com.
I didn't find any Lemongrass Stalk, so I'm taking the author's suggestion to replace it with grated lime peel. And, I'm adding peanut butter. Don't judge me, someone suggested it in the Comments section and it sounded like a good idea ;) I'm thinking of serving it over Jasmine rice or adding potatoes.

**Update: I ended up finding Lemongrass Stalk, yay! Lots of chopping and blending in this recipe, which makes it time consuming. It took me a solid hour to prep and cook, I had to check the recipe frequently. I would rate it in the Medium-Easy category. I did add salt to the paste, added 2 Tbs of Chunky Peanut Butter once the paste was in the pan, and I served it over Thai Coconut Rice (minus the toasted coconut and coconut flavoring).
I liked it. The curry itself wasn't all that impressive, good but not the best I've had. But with rice, it was amazing! If I repeat this recipe, I may try adding a little fish sauce.
Enough hugging and kissing for one day. Peace Out peeps!
