Strawberry Fig Brie Bites

I've been trying to use my last few jars of homemade strawberry fig preserves and this recipe for Brie Bites seemed like the perfect solution. I'm gonna bake up a batch tonight and take them to the Ohio State vs. Kansas Game Night Party. I'm not a huge basketball fan and could care less about either team, but I love get-togethers and this one is sure to be fun.

I did a sample batch of these earlier today and they were devoured in minutes. Love it when that happens :)

I'm basing this recipe on one done over at The First Apartment Living. A serious baker would make the dough from scratch and add egg wash and all that jazz, but if quick and easy is what you're going for this is the recipe.

You'll need a mini-cupcake pan.

Brie Bites
  • 1 round of brie 
  • Pillsbury biscuits (the cheap, butter ones NOT jumbo or flaky) 
  • Jam (I used this amazing strawberry fig preserves my mom cans every summer...amazing stuff)
  • Salt 
Preheat your oven to 350.

Place one biscuit round into the bottom of each cupcake pan cup.

Remove the hard, white top layer from the brie round (possibly optional? I'm not sure...), then cut it into small cubes. Place one cheese cube into the bottom of each cup and top with a teaspoon of jam. Sprinkle lightly with salt.

Pull the sides of the dough up, and pinch at the top to form a pouch.

Bake until golden brown, 10-12 minutes.

Drizzle with honey and serve hot, or immediately transfer to a good bread basket. They're good cool, but AMAZING warm.
