I get my veggies from a local CSA...lots of zucchini have rolled through my kitchen in the last two weeks.
Zucchini...I hated it as a kid. It was always soggy and seedy and gross. I tried it again a couple of years ago-- thin strips of crisp, warm, well-seasoned goodness. It revolutionized my zucchini experience. Then again, thin-cut, crisped and salted on a flatbread. Yum, Zucchini!
The trick to good zucchini is not overcooking it--it only takes about a minute to saute. Anyway, I have a bunch of zucchini at home waiting to be cooked. I'm gonna try this Quick Zucchini Saute from the peeps over at Smitten Kitchen.
***Update: So, I hated the Zucchini Saute. I'm pretty sure I made it correctly...it just didn't work for my taste buds :(
