Sweet Potato Veggie Burger with Avocado

Why is it so hard to find tahini? At least it was for me, maybe I just wasn't looking in the right place....not in Whole Foods or Trader Joe's but it surprisingly popped up in  Eddie's.

Anyway...I'm glad I found it because these Sweet Potato Burgers were so on point. They're definitely getting thrown into regular rotation.

I've been on a veggie kick lately...even bought some extra-firm tofu the other day. I have no idea how I'm gonna cook it...except that I need to strain it first. Probably a curry or something...hmmm. Got some CSA peppers I need to use too...

Anyway, this burger is as good as it looks. You should try it. Or commission me to make you a batch, which I will gladly do if you agree to share. nom nom nom :)
