I had cute little pear tomatoes in my CSA share last week. Made a Tomato and Mint Salad. So pretty and summer-y tasting!

Tomato Salad with Mint

Tomato Salad with Mint
2 – 3 cups halved cherry tomatoes
1 tablespoon roughly chopped fresh mint
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
2 tablespoons olive oil
salt and pepper
1/2 C feta chesse
Combine everything in a small bowl. Taste and adjust seasonings as desired.
A couple of months ago I had a ton of garlic scapes. All I knew to do with them was make pesto...which was AMAZZZZING. I'll try to find that recipe to post.
Anyway, I never thought to grill them and add them to a flatbread. Genius! I'll have to try that next year!
