10 Dishes to Master

I feel like my new year starts in September--my life revolves around semesters and every Fall brings new students and big change. I just love Fall--it's all about change and coolness and boots and chunky sweaters and hot foods and football and state fairs. Just perfect :)

I've spent the past year or so trying random recipes from blogs and Pinterest. It's been fun and I've stumbled across a few good things. This season, though, it's back to the basics. I'm going to absolutely master the dishes I love--my kitchen basics--in the most wholesome, delicious ways possible. I'll take what I already know, do a bit of basic research on execution and food science (Alton Brown style), and continue my play with herbs, spices, and chilies. Hopefully, the results will be phenomenal and original.

10 Dishes to Master:

1.) Omelets, Frittatas, & Quiche
2.) Roast Chicken
3.) Rice, Orzo, Quinoa, & Risotto
4.) Bread
5.) Chili
6.) Chicken Noodle Soup
7.) Lasagna
8.) Steak
9.) Fried Chicken
10.) Gravy

A few of my favorites missed the Top 10, I really want to get around to them though:

11.) Macaroni and Cheese
12.) Turnips

15.) Potato Gratin & Scalloped Potatoes

I guess I cheated a bit with nos. 1, 3, and 15. meh

Is it possible to make healthy fried chicken? maybe oven baked...hmmm. Guess I'll find out :)
