Banana Fritters

Ingredients

3 ripe bananas
1 egg
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
1/2 cup of sugar
2 cups of all-purpose flour
1 tablespoon of baking powder
3 cups of vegetable oil for frying
1/2 tsp salt
confectioner sugar (optional)


Method

Combine flour, salt, and baking powder. Set aside.

In a large bowl, peel and cut ripe bananas into chunks, then mash into a smooth consistency. Think baby food.

In a separate bowl, whip the egg. Add the sugar, vanilla and cinnamon. Whip until the sugar dissolves completly.

Add the wet mixture to your bananas. Slowly add the flour mixture to your wet mixture, constantly stirring to avoid lumps.

Heat the oil over medium-high heat. Once it's hot, add tablespoon-fuls of the batter. Fry for one minute until golden brown, then flip and cook for another minute. Fritters should float once they're done. Remove and drain over paper towels. Dust with confectioner's sugar and serve warm with vanilla ice cream.
