Amchar Masala is frequently used in creating Caribbean cuisine, but I have a hard time finding the spice blend in Baltimore City. Thankfully, it's made up of spices that are easily found in the Indian market near my home. I can make it myself, and it's super easy!
Amchar Masala
4 Tbs Coriander Seeds
1 Tbs Cumin Seeds
2 Tbs Black Peppercorns
1 Tbs Fennel Seeds
1 tsp Fenugreek seed
Add the spices to a saucepan, and stir over medium heat until the spices are roasted. They should darken just slightly.
Let cool, completely.
Grind spices to the desired consistency in a mortar & pestle or clean coffee grinder.
Store in an airtight container.
Makes about 8 Tbs.
