Hostessing: Mojito Shrimp Salad

Channel a bit of Mardi Gras fun with this super quick and easy Mojito Shrimp Salad.

Mojito Shrimp Salad

What You Need:
1/4 of a honeydew melon
1 mango, sliced 
Juice and zest of 1 orange 
Juice of 1 lime 
2 tbs fresh mint, finely chopped 
olive oil 
1 tsp crushed pepper flakes 
Sea salt & ground pepper
2 heads of romaine lettuce, chopped
1 bunch, spinach 
1 avocado, chopped
1/2 small red onion, finely diced

16 large shrimp 
Garlic powder, salt, pepper, olive oil

What You Need To Do:
Combine and toss honeydew melon, mango, orange juice and zest, lime juice, mint, 1 Tb olive oil, red pepper flakes, lettuce, spinach, avocado, red onion, and salt and pepper.

Remove shells and devein the shrimp. Season shrimp with the garlic powder, salt and pepper. Drizzle a grill pan with olive oil. Add shrimp and cook for 2 minutes per side, on medium heat, until shrimp are just pink. Toss into salad.

Serve with balsamic vinaigrette and olive oil.

Yields 4 servings.
