Hostessing: Prosciutto Avocado Spinach Salad with Orange Balsamic Vinegar Dressing

Not the most brunchy meal, but I've been really feeling blueberries lately :) Head over to Hungry Happens for this and other great recipes. This recipe serves 6.

Prosciutto Avocado Spinach Salad
What You Need:
18 cups Baby Spinach
18 slices Prosciutto
3 large Avocado, sliced
2 cups Blueberries
1 cup Pomegranate Seeds

What You Need To Do With It:
Preheat oven to 375 F.

Place prosciutto slices on a parchment lined baking sheet and bake for 10-15 minutes or until crispy.

Assemble salad.

Orange Balsamic Vinegar Dressing
What You Need:
2 C Orange Juice
6 Tbs Balsamic Vinegar
6 Tbs Olive Oil
3 Tbs Honey or pure Maple Syrup
Salt and Pepper to taste

What You Need To Do With It:

Combine all ingredients and whisk.
