Chili-Stuffed Sweet Potatoes

Last night I got home from the gym at 9 pm and needed a quick, healthy meal. In my arsenal--sweet potatoes, avocado, spinach, arugula, chunky meat sauce, black beans, and salad toppings. I thought I was being brilliant by cooking the sweet potato in the microwave, then stuffing it with chili, black beans, and half an avocado, chopped. And on the side, a quick spinach and arugula salad with the other half of the avocado, sunflower seeds, more black beans, salt, pepper, and dressing. It all took less than 20 minutes.

It was so delicious! 

I was so proud of myself, but it turns out that though Chili Stuffed Sweet Potatoes were new to me, the recipe idea isn't--see here for a great recipe. Making a large batch of meat sauce that can double as spaghetti sauce or chili--a brilliant time saver. It's a staple in my fridge. My version of meat sauce is roughly based on Ree Drummond's, but I add lots of cumin and chili powder.
