A Few Fall Dessert Favorites

Dessert is my thing. I have a killer sweet tooth and am guilty of sometimes having dessert before dinner, or worse, dessert for dinner :)

As cooler weather rolls in, I'd like to share a few of my favorite fall goodies.

Pear Crisp
Filling
9 C Pears, sliced
1/4 C Sugar
2 Tbsp Lemon Juice
1 tsp Cinnamon

Topping
1 C Oats
1/2 C Flour
1/2 C Brown Sugar
1 tsp Cinnamon
6 Tbsp Butter

Heat oven to 350. Mix pears, sugar, lemon juice, and cinnamon. Spray 9x13 pan with cooking spray. Add pears to pan, then add the butter (cut into small squares). Combine oats, flour, brown sugar, and cinnamon. Sprinkle over pears. Bake for 50 minutes.

Oatmeal Peanut Butter Chocolate Chip Caramel Bars
1 14-oz bag of Caramels
1/2 C Milk
2 C Flour
2 C Oatmeal
1 1/2 C Brown Sugar
1 tsp Baking Soda
1/2 tsp Salt
1 C Peanut Butter
1 C Chocolate Chips
1 C Nuts
1 C Butter, melted

Cook caramel and milk over low heat until melted. Allow to cool.

Mix flour, oatmeal, brown sugar, baking soda, salt and melted butter. Put 3/4 of mixture in a greased 9x13 baking dish. Bake at 350 for 10 minutes. Allow to cool.

Sprinkle chocolate chips and nuts over cooled mixture, then add cooled caramel mixture. Put remaining oatmeal mixture on top. Pat firmly and bake at 350 for 20 minutes.

Almond Blondies
4 Eggs
2 C Sugar
2 C Flour
1/4 tsp Salt
2 tsp Almond Extract
1 C Butter, melted

Beat eggs and sugar together, then add remaining ingredients. Pour into greased 9x13 pan, and bake at 325 for 30 minutes.

Brownies with Frosting

Brownie Mix
2 C Sugar
1 1/2 C Butter
2 Eggs
1 C Milk
1/2 C Cocoa
2 C Flour
1 1/2 tsp Vanilla Extract
1/2 tsp Salt

Mix sugar, butter, eggs, and milk until just frothy. Add cocoa, flour, vanilla extract, and salt; mix well. Bake at 350 for 25 minutes.

Frosting
1 C Sugar
1/4 C Coconut Oil, room temperature
1/4 C Milk
1/2 C Chocolate Chips

Put sugar, coconut oil, and milk in saucepan over medium heat. Stir constantly and continue to heat until the mixture begins to boil. Allow to boil for 30 seconds. Remove from heat and add chocolate chips. Beat until smooth, then spread over brownies.

Chocolate Butterscotch Granola Clusters
1 C Chocolate Chips
1 C Butterscotch Chips
1 C Salted Peanuts, crushed
2 C Granola

Melt chocolate chips and butterscotch chips. Add peanuts and granola. Mix well. With an ice cream scoop, scoop mounds onto wax paper and allow to cool.
